Transparent Kitchen project has been promoted in Yicheng city of east China's Anhui province. Through a window, people can watch the live cooking process, so that they feel more assured of the food safety.
He Ling, deputy director of the Food and Drug Administration of Yicheng said since 2013, according to different types of restaurants, the city has proposed different types of transparent kitchens including video kitchen, window kitchen and online kitchen.

He Ling said building transparent kitchens is an effective measure to ensure the food safety and is also the inevitable trend of social development and progress. It has promoted the good faith in food service operating, and guided restaurants to take the initiative to accept social supervision; on the other hand, it can eliminate customer concerns about food safety, and create a safe, secure and healthy food consumption environment.
There are currently twenty one transparent kitchens in Yicheng, which will be surely seen more in the future.
